As the host and passionate chef Andreas Martin was running through the Engadine forest with his dogs one day, he noticed the many Swiss stone pine cones on the forest floor. «Why not cook a dish with them?» he asked himself.
His experimentation began: He produced a chocolate-covered croquant with the pine nuts. «That went down so well that I carried on experimenting», says Martin. Various syrups made of pine shavings for smoking meat followed.
Today, the leading chef at the Gasthaus Krone in La Punt serves a six-course Swiss-stone-pine menu, tailored according to the season, and featuring smoked, cooked, marinated, boiled or fermented Swiss stone pinewood. This is accompanied by, for example, pralines with wild game and fresh pine tips, or porcini cream soup in a pine bowl.
Andreas Martin has been awarded the Bib Gourmand from the Michelin Guide and 15 Gault Millau points for his specialities.
The Krone is renowned for its natural, market-fresh cuisine based on regional products. The menu features Engadine, Bünden and Veltlin specialities, which have won multiple awards from Gault Millau, Michelin Guide and Guide Bleu.
The Restaurant Krone is open for lunch from 11:30 until 14:00, and in the evening from 18:30 until 21:30.
With its comfortable upholstered furniture and cosy tiled stove, the Steiner stuba invites you to linger. Enjoy a fine aperitif before your meal. Or a digestif - at the end of one of the excellent menus by chef Andreas Martin.
The Stüva is charming and flooded with light. The round tables are very popular. Whether for lunch or dinner, people like to meet here. The modern interior rounds off the ambience. This is a venue for enjoyment, well-being, and relaxation.
The Stüvetta is the oldest and smallest of the lounges at the Gasthaus Krone. The nearly 300-year-old Swiss-stone-pine panelling and the pine-board floor have been left as close to the originals as possible and create an authentic Bünden ambience.
